Founder of this project, Florian Labrousse noticed the enthusiasm Parisians had for quality fast food. This is what brought brands like ‘Jour’, ‘Naked’ and ‘Cojean’ a huge success. Florian decided to follow this success story and focus on bagels. Bagel Shop was launched in 2012 and Polette worked closely alongside the brand on all branding, signage and brand environment issues. The architecture is designed by Laura Gonzales.
